Malai Kesar
5 portions (100 grams each)
Ingredients:
800g carrot (grated)
100g sugar
80g khoya
5g green cardamom powder
50g cashew nuts
150ml ghee
2 litres milk
Method:
- Grate the carrots using a fine grater.
- Take ghee in a thick-bottomed pan and add the carrots.
- Cook the carrots till all the moisture has evaporated.
- Add the milk and cook on a slow flame stirring continuously.
- Add the grated khoya when the carrot is cooked and the milk has reduced.
- Sprinkle the green cardamom powder and add cashew nuts.
