Malai Kesar

5 portions (100 grams each)

Ingredients:

800g carrot (grated)
100g sugar
80g khoya
5g green cardamom powder
50g cashew nuts
150ml ghee
2 litres milk

Method:

  1. Grate the carrots using a fine grater.
  2. Take ghee in a thick-bottomed pan and add the carrots.
  3. Cook the carrots till all the moisture has evaporated.
  4. Add the milk and cook on a slow flame stirring continuously.
  5. Add the grated khoya when the carrot is cooked and the milk has reduced.
  6. Sprinkle the green cardamom powder and add cashew nuts.
