Spinach & Feta cheese pastries
Cooked in olive oil, spinach and feta cheese pastries can make do for a light, quick snack
Ingredients
- 2 tbsp olive oil
- 1 medium onion, very finely chopped
- 500g spinach
- 1 small pack of feta cheese
- 2 tbsp sumac (optional)
- 1 tsp of salt
- 1 x 375g packet of pre-rolled puff pastry
- Preheat the oven to 200c, gas mark 6
Method
- Wash the spinach and drain it well - it's a good idea to lay it on kitchen paper or a clean tea towel to avoid soggy pastry hell. Fry the chopped onion in the olive oil until it's transparent, and then stir in the sumac.
- Put the spinach and a teaspoon of salt in a bowl and rub them together, until the spinach reduces down (we don't cook the spinach). Now put the spinach into a sieve and drain out all the juice. Next chop the spinach and put it into a bowl with the onions and the crumbled feta cheese.
- Now using a 4cm round cutter cut out the circles of dough. Repeat with all the dough. Put one of the circles in the palm of your hand and with your finger, moisten the edge with water all the way round.
- Now put a spoonful of the stuffing into the centre, and seal.
- Put them on a greased baking tray and brush with melted butter, and bake for 15 minutes or until golden brown.
